โข 1 cup Castelvetrano olives, pitted and torn
โข 1 small yellow onion, sliced
โข ยฝ cup red wine
โข ยผ cup olive oil
โข 3 tablespoons capers
โข ยฝ teaspoon crushed red pepper
โข 1 ยฝ teaspoons kosher salt, divided
โข Freshly ground black pepper
โข 6 6-oz. cod fillets
โข Chopped fresh flat-leaf parsley, for serving
Instructions
- Preheat your oven to 425ยฐF (220ยฐC).
- In a 3-quart baking dish, combine the tomatoes, olives, onion, wine, oil, capers, crushed red pepper, 1 teaspoon of salt, and a few grinds of black pepper; stir to mix.

Roast the mixture until the tomatoes have softened and the sauce has thickened slightly, about 35 to 40 minutes. You can prepare this part of the recipe up to a day ahead.

When ready to serve, reheat the oven to 425ยฐF (220ยฐC).

Season the cod fillets with the remaining ยฝ teaspoon of salt and more black pepper.
