Tofu Pad Thai

Thailand is famous for its smiles, sunny beaches and delicious cuisine.

But like everywhere in the world…

Thailand’s food habits are changing. 

Every year, more people are being dragged to the darkside of fast food and processed junk.

But right now, they still have HALF the amount of overweight people compared to the Western world (one third compared to two thirds in Western countries).

They also have only 1 in 10 with blood sugar issues, compared to over a THIRD in the US (although 4 in 5 of those people don’t even know it).

A lot of Thailand’s healthier people has to do with their food, which is high in vegetables and relatively low in factory farmed meat.

This Tofu Pad Thai dish (feel free to use chicken or pork if you prefer) is packed with shallots, coconut oil, carrots, garlic peanuts and bean sprouts.

So it’s rich in flavor, packed with gut enriching nutrition and has ZERO processed inflammatory ingredients.

Drizzle them in a sweet tasting white miso, yogurt and rice vinegar sauce…

And then shove in the oven.

Roasted Aubergine and Tomato Stew

Did you know that rather than a vegetable…

Aubergines (eggplants) are actually a fruit?

Why? Because they grow from a flowering plant and contain seeds.

More importantly, eggplants are SUPER gut healthy!

They’re nutrient-dense, high in fiber and PACKED with antioxidants!

In fact. some studies suggest they can help combat chronic diseases, like heart diseases and high blood sugar. 

So naturally, I had to put together a recipe with aubergine as the hero ingredient.

My Roasted Aubergine and Tomato Stew recipe also contains onions, cherry tomatoes and chickpeas…

And cooking it is as easy as throwing the chopped ingredients in a baking dish and leaving in the oven.

Pinwheel Shepherds Pie

Serves 8

Ingredients

  • 1lb. lean ground beef
  • 2 tablespoons onion or garlic salt 8 ounces low carb mushroom soup
  • or sauce mix
  • ¼ cup ketchup
  • 1lb. package of frozen, mixed vegetables
  • 1lb Atkin’s low carb bake mix or equivalent

Instructions

  1. Pre-heat oven to 375.
  2. Mix low carb bake mix into dough per package instructions and roll
    flat into a circle roughly the same diameter as your skillet.
  3. Cut dough into equal sized triangles and roll each triangle once from
    base to tip.
  4. Set aside. In a non stick skillet, stir in ground beef and onion salt and
    cook thoroughly until browned. Stir in mushroom soup/sauce,
    ketchup and mixed vegetables.
  5. Bring mixture to a boil, then reduce heat to medium and cover and simmer 8 – 10 minutes or until vegetables are tender.
  6. Remove skillet from heat and arrange dough triangles on top of
    mixture with the tips pointing to the center.
  7. Place skillet in oven and bake at 375 for approximately 20 minutes
    or until dough turns golden brown
